Herbed Dinner Rolls:
• 3 cups boiling water
• 2 cups old-fashioned oats
• 5 teaspoons active dry yeast (4 – 1/4 oz pkgs)
• 1 cup warm water
• 1/2 cup honey
• 6 tablespoons butter, softened
• 4 teaspoons salt
• 2 eggs, beaten
• 8-8 1/2 cups whole wheat flour
• 1/2 cup butter, melted, divided
• 4 tablespoons grated Parmesan cheese
• 1 tablespoon Italian seasoning mix
• 1 teaspoon garlic powder
1: In a small bowl combine boiling water and oats; cool to 11o F and set aside.
2: In a large bowl, dissolve yeast in warm water, then add honey, butter, salt, eggs, oat mixture, and 4 cups flour; stir well until combined.
3: Add enough remaining flour to form a soft dough. Turn dough on a floured surface and knead until smooth.
4: Place in a greased bowl, turning once to grease top. Let rise in warm place 30 minutes or until doubled.
5: Punch dough down and shape into 1-inch balls, place balls in 2 (13-in x 9 in. x 2 in.) greased baking pans. Allow to rise until doubled, about 1 hour.
6: Brush rolls in each pan with 1/4 cup butter and bake at 375 F 25-30 minutes or until golden brown, and toothpick inserted in middle comes out clean.
7: Combine remaining topping ingredients and set aside, brush remaining butter evenly over rolls and sprinkle with topping.
8: Cover rolls with foil and bake an additional 5-10 minutes longer.
9: Let cool 10-15 minutes and serve.
Yield: 16-20 servings
Store in airtight container 2-3 days or in freezer up to 2 months
