Apple Crumb Pie:
“One piece of this delicious apple pie is never enough! With its tart apples and sweet crumb topping it’s a wonderful treat! We sometimes drizzle it with caramel topping and top with fresh whipped cream”.
•2 cups whole wheat flour
•1/2 cup safflower oil or butter
•1 teaspoon honey -optional-
•pinch of salt
•8 baking apples, peeled, cored, and thinly sliced
•3/4 cup honey
•2 tablespoons lemon juice
•1/4 cup flour
•1 teaspoon each, nutmeg, cinnamon, and allspice
•2 tablespoons butter
•1/2- 3/4 cup flour
•1/3 cup honey
•1/4 cup safflower oil or butter
1: In a pie pan combine crust ingredients until a smooth ball of dough forms (add additional flour if dough is sticky)
2: Pat pastry dough in bottom and up the sides of pie dish. Add decorative edging if desired. Set aside
3: In a large bowl combine apples, honey, lemon juice, flour, and spices- stir until combined. Set aside.
4: In a small bowl combine topping ingredients until you have a crumbly topping, adding additional flour if needed. Set aside.
5: Fill pie crust with apple filling and dot with butter. Sprinkle evenly with crumb topping.
6: Bake at 350 F 50-60 minutes or until golden brown and apples are soft. (If topping browns to quickly, cover tightly with tin foil.
7: Cool pie 10-15 minutes then serve with fresh whipped cream.
Yield: 1 pie ( 8-9 servings)
Store in refrigerator 3-4 days or in freezer up to 2 months
