• 2 cups whole-wheat flour
• 1/2 cup safflower oil
• pinch of salt
• 4 tablespoons butter, melted
• 1 cup grade B maple syrup
• 1/4 cup honey
• 1 teaspoon vanilla extract
• 3 eggs
• 1 cup pecan halves
Fresh whipped cream, optional
1: Combine crust ingredients until a smooth non-sticky ball forms (add more flour if necessary) Pat crust in bottom and up sides of 9-in. pie plate. Add decorative edging if desired.
2: Preheat oven to 350 F.
3: In a medium bowl whisk together melted butter, syrup, honey, vanilla, and eggs until blended.
4: Arrange pecan halves on bottom of pie crust; carefully pour syrup mixture over pecans.
5: Bake pie 1 hour or until knife inserted in middle comes out clean.
6: Cool pie on wire rack 15 min and serve with fresh whipped cream if desired.
Yield: 1 (9 in.) pie. (9-10 servings)
Store in fridge 3-4 days.
