Parsley-Butter Wild Rice:

•5 cups uncooked wild rice and brown rice mix
•1/2 cup butter
•1 tablespoon fresh parsley, minced
• 1/2 teaspoon garlic powder
•Salt and pepper to taste
1: In a medium pot, cover rice with 2-3 cups water. Simmer on stove over medium high, with lid on until boiling, reduce heat to low and allow to cook until rice is soft, about 45-60 minutes.
2: In a small saucepan over medium heat, melt butter. Add parsley and garlic. Stir to combine.
3: Move rice to serving bowl and drizzle with parsley-butter. Season with salt and pepper to taste and toss gently until combined.
4: Serve warm.
Yield: 9-10 servings
Store in refrigerator 2-3 days.
