Ingredients:
Bars:
• 2/3 cup honey
• 3/4 cup creamy sugar-free peanut butter
• 2 1/2- 3 cups sugar-free crispy rice cereal (I used Barbara’s)
Frosting:
• 1/4 cup honey
• 1/4 cup coconut oil, melted
• 1/3 cup unsweetened cocoa powder
Instructions:
1: For the bars: In a small sauce pan over medium heat, stir honey and peanut butter together until smooth. Heat until mixture is has a slight liquid consistency.
2: In a large bowl combine peanut-honey mixture and 2 1/2 cups cereal. Add enough remaining cereal to form a thick, but still moist consistency.
3: Press mixture into a greased baking dish and chill 2 hours.
4: Just before ready to frost, combine frosting ingredients and stir until smooth.
5: Spread bars with frosting. Refrigerate 20 minutes then cut into bars.
Yield: 1 dozen bars
Store bars in refrigerator up to 3 days.
