• 2-3/4 cups milk
• 1 egg, beaten
• 1/3 cup honey
• 2 tablespoons instant tapioca
• 1 teaspoon vanilla
• 1 teaspoon grated lemon zest
1. In a medium saucepan, whisk milk, egg, honey, and tapioca until combined. Allow to sit 5 minutes.
2. Bring milk mixture to a boil over medium heat, stirring constantly. Remove from heat and stir in vanilla and lemon zest. Let sit 20 minutes. It will thicken into a custardy pudding during this time. Refrigerate 1 hour if you like your pudding cold. Or serve warm.
Yield: 6 servings
Store in refrigerator 3-4 days.
