Would you believe me if I told you that less than a month ago, I did not like pancakes?
All those negative feelings toward pancakes floated away when, just out of curiosity, I tried a new method for making blueberry pancakes a few weeks ago. (recipe coming soon!)
You have no idea how upset I was over what I have been missing with pancakes all these years 🙁 What the heck was wrong with me??
I saw a great idea online the other day for making a cinnamon-swirl pancake. Basically all you need to do is melt some butter, stir in some coconut sugar and cinnamon, put it into a zip lock bag and snip a corner off, and pipe a swirl onto your pancakes that are cooking.
You’re gonna need your favorite pancake batter, all prepared. (You’re going to need enough batter to make 12 pancakes)
Go ahead and start heating up your non-stick griddle. (The pancakes can also be prepared in a non-stick frying pan)
For The Cinnamon Swirl:
- 1/4 cup butter, melted
- 1/4 cup coconut sugar
- 2 teaspoons ground cinnamon
Combine all ingredients and place in a zip lock bag. Seal and snip off one corner. Set aside.
Start cooking pancakes according to recipe instructions. When top begins to bubble, quickly pipe a swirl in middle of pancake. Flip pancake and cook on other side until inside is thoroughly cooked. Repeat with remaining batter.
Here’s a step-by-step of the whole process:
Serve with maple syrup.
