I’m a firm believer that the first meal of the day should be delicious, nutritious AND mindlessly easy.
Because, my brain usually isn’t running on full steam first thing in the morning, no matter how many cups of coffee I have.
Clearly, I’m a big fan of no-fuss, grab-and-go breakfasts that taste indulgent, but are in fact healthier.
These granola bars fit the bill. They’re stuffed with lots of nutrients and whole grains from oats, wheat bran, nuts, and coconut. — Oh, and peanut butter and chocolate chips, because breakfast should be healthy but also fun, right?
Yes, and those who think otherwise have never experienced true happiness.
These granola bars are the epitome of soft and chewy and so full of texture which I LOVE. The melt-y, gooey chocolate chips are pretty amazing too.
They’re also THE perfect way to get your kids to eat their whole grains, since nearly every kid I know will eat anything with chocolate in it. — Rachel, also known as the pickiest 3-year old on the planet who generally steers clear of anything with oatmeal in it, was asking for another granola bar this morning, primarily because of the chocolate. So I can tell you first-hand that it works. 😉
You’re only going need 30 minutes of your morning to make these granola bars. It’ll take 10 minutes to mix up your simple granola bar-dough. — 20 minutes in the oven. —- And then just a few minutes of cooling. Bam. Breakfast is ready.
The first time I made these granola bars, I cut them into bars right after they came out of the oven, since I knew I wouldn’t be photographing them, and it was okay if they were a little less pretty-looking.
Let me just say that biting into one of these granola bars, warm from the oven, and literally exploding with gooey chocolate was one of the best decisions of the week. It totally made my morning.
I love the fact that these granola bars are so satisfying and filling. I had one for breakfast this morning and it literally kept me going all morning.
It’s extremely hard to believe, but these granola bars do not have ANY oil or butter in them. So that means it’s perfectly acceptable to have two with your coffee. 😉
Seriously, take 30 minutes of your time this morning and make these granola bars. It’s the perfect excuse to eat chocolate and peanut butter for breakfast.
Basically, it tastes like you’re eat a soft-baked oatmeal cookie for breakfast. — And trust me, it really doesn’t get any better than that..♥
But if you’re one of those people who like eating plain toast and oatmeal for breakfast every day….well, I can’t really help you there.

Whole-Grain Peanut Butter Chocolate Granola Bars
- 5 cups old-fashioned rolled oats
- 1 cup wheat bran
- 2/3 chopped pecans
- 1/2 cup unsweetened shredded coconut
- 1/3 cup coconut sugar
- 1/4 teaspoon salt
- 1-1/3 cups creamy peanut butter or almond butter
- 1/3 cup maple syrup
- 3 large eggs
- 1/2 cup cold water
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
Preheat oven to 350F. Lightly grease a 9x13 baking pan. Set aside.
In a large bowl, combine oats, wheat bran, pecans, coconut, coconut sugar, and salt. In a medium bowl, whisk peanut butter, eggs,water, and vanilla until smooth. Combine liquid with the dry ingredients until just moistened. Stir in chocolate chips.
Press mixture evenly into prepared pan. Bake at 350F 20 minutes, or until edges start to brown slightly. Cool granola bars on a wire cooling rack completely before cutting into bars.
Recipe NotesStore granola bars in an airtight container at room temperature up to 5 days. NOTE: For peanut-free granola bars, feel free to substitute almond butter for the peanut butter.
