Ingredients

Salad

  • 2 cups cooked quinoa, cold
  • 3 cups chopped romaine lettuce
  • 1/2 cup black beans, drained
  • 1 medium tomato, diced
  • 1/4 cup sliced black olives
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons minced fresh cilantro
  • Salt and pepper to taste

Avocado Lime Dressing

  • 1 medium avocado, peeled, pitted, and diced
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

Salad

  1. In a large serving bowl, combine all salad ingredients and season with salt and pepper to taste. Keep cold while preparing the dressing.

Avocado Lime Dressing

  1. In a food processor or blender, pulse all dressing ingredients several times until completely smooth. Season with salt and pepper to taste. When ready to serve, drizzle dressing over salad and toss to coat. Serve immediately and enjoy!
