After yesterday’s awesomeness, you can guess all that I’m craving now. Bring on the comfort food.
I feel as though today requires something extra-cozy and comforting. It IS the last day of September today, ya know.
How can it be that we’re practically into OCTOBER already?! Right now, things are super-crazy here as my family and I are in the midst of preparing for a road-trip to Arkansas to attend a two-week conference with our church. We’re leaving in less than a week and crazy-freak-out-mode is in full force here.
P.S—don’t worry, I’m not going MIA on the blog. I’ve prepared a ton of posts to keep you guys entertained while I’m gone—I think you guys would miss me too much if I fell off the face of the blogging earth for two weeks. You know you would. 😀
But anywho, do you know what it’s like packing for a big trip for seven people for nearly two weeks of traveling? I’ll give you a hint—It’s exhausting and I’m craving anything and everything easy right about now.
That’s where cozy and comforting, throw-together-in-30-minutes dinners come in.
Enter Italian Meatball Subs.
I’m not about to skip Italian night just because life is cray. When life gives you crazy, make Italian meatball subs.
Then eat ’em like it’s the last thing your face will ever eat.
Are you obsessed with Italian food as much as I am? Awesome. Let’s be friends and eat all the meatball subs, yo.

Gosh, did I really just say “groovy”? I must be tired. This isn’t the 70’s I don’t think…
So a few days ago I was in a dinner-rut. It was getting late and the troops were getting hungry. It was really grey and chilly outside, but I wasn’t in the mood for a soup, and just wasn’t craving something rich like a super-cheesy casserole. But at the same time, I like reaaaaally wanted Italian food. Basically anything carb-filled.
Aaaand those freshly-made buns sitting all lonely on the counter were kinda calling my name…
Ditto for the jar of marinara sauce sitting in my pantry.
I already had meatballs all cooked and ready to go, so I slapped ’em on a bun—dumped on some warm marinara sauce, went cray with the Parmesan cheese and called it DONE.
The comfort, you guys. The cozyness. The EASY-NESS.
Boring dinners shall be no more with Italian Meatballs Subs around.
Now on that note, I’m off to pack up my can’t-live-two-weeks-without favorite kitchen gadgets. And hope that my dad doesn’t notice that extra 5-foot tall box.

Italian Meatball Subs

Ingredients
- MEATBALLS:
- 2 lbs ground beef
- 1 cup dry bread crumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 large egg
- SUBS:
- 8 hot dog buns split
- 1/2 cup marinara sauce warmed
- 1/4 cup grated Parmesan cheese
Instructions
- Prepare the meatballs: In a large bowl, combine beef, bread crumbs, seasonings, and egg. Roll meat mixture into 24 1-in balls and place on a greased baking sheet. Bake meatballs at 375F 20-25 minutes or until beef is no longer pink.
- Prepare the subs: Place 3 meatballs in each split bun. Top with warm marinara sauce and sprinkle with Parmesan cheese. Serve subs warm.
