I am all about the hearty dinner meals, these days….
I mean, December is obviously a little confused and apparently thinks that it’s January and therefore had decided that it’s time for the teen temps and the piling on of the white stuff.
Which means that it’s time for ME to pile on the hearty, stick-to-your-ribs dinners like there’s no tomorrow.
Oh, and the slow-cooked stuff too. I freaking ♥ my crockpot. Totally my lifesaver. And an empty-stomach-saver, and a freeze-your-tail-off-saver.
Whatever, Mother Nature. Do your thing. I’ll just be wallowing my freezing self in the beef stew.
Yes, I would gladly swim in a bowl of beef stew. I mean, think about it! It’s super-thick and chunky so you’d have all these little carrot life rafts and beef-chunk boats that you could just lay on in the warm bed of beefy broth. Totally in!
Yikes. I’m even scaring myself now….
Clearly I’ve been in comfort food-overdrive lately as you can see here, here and oh, man HERE. So I’m just putting that down to excuse my less-than-sane mind lately…
But this beef stew? It was definitely one of my brighter moves.
I mean, it’s veggie-filled beef stew, guys! In the crockpot! Cooking itself all day while you do um, NOTHING. Except for possibly make these dinner rolls to go with it.
Hint, hint. (not optional!!)
All you have to do to make this hearty stew? Basically just dump everything in the crockpot and turn it on. Sha-ZAM.
Okay, okay there is one TEENY little step to the beef that you must do before combining it with the other ingredients. Your cubed beef stew meat is just lightly pan-fried in oil with a little bit of flour before throwing it in the crockpot. This little step puts a nice brown sear on the outside of the beef and will ensure that the beef cooks up super-moist and fall-apart tender in your stew.
Other than that, this stew is literally just a ton of harvest veggies, beef broth and seasonings. I used carrots, red potatoes, pearl onions, celery, and diced tomatoes; but totally feel free to change up the veggies with your favorites. I have a feeling root veggies like parsnips, turnips, ect would go fabulously in this stew! Next time. ♥
Slow-cooking this stew just really brings out the unbelievable homey flavors. The thick beef broth is perfectly seasoned… the veggies cook up perfectly soft and tender, and the beef….oh my gosh it literally just falls apart it’s so juicy and tender.
Crockpot meals FTW, guys!! You just can’t beat ’em.
And I literally can’t stop eating ’em.
It’s kinda mind-boggling to me that such simple ingredients could result in such an amazing beef stew. There’s nothin’ too fancy in here and that’s why my family loves this stew so much. Sometimes simple is best. 🙂
I mean, I’m totally up for pesto in my tomato soup anytime, but when it comes to the classic stuff like beef stew, I like to just leave it alone and let the simple stuff speak for itself.

Slow-Cooker Beef Stew

Ingredients
- 2 lbs beef chuck roast, cut into 1/2 in cubes
- 1/3 cup white whole wheat flour
- 3 tablespoons olive oil
- 2 cups sliced carrots
- 3 celery ribs diced
- 3 cups Russet potatoes diced into 1/2 in pieces
- 1 large onion roughly chopped
- 4 garlic cloves minced
- 1 can 28 oz diced tomatoes
- 4 cups water
- 1 tablespoon balsamic vinegar
- 1 teaspoon Italian seasoning
- 2 tablespoons minced fresh parsley
- Salt and pepper to taste
Instructions
- In a large bowl, combine beef cubes and flour. In a medium saucepan over medium-high heat, saute beef in oil stirring occasionally until beef is slightly browned, 5-10 minutes. (beef will not cook entirely)
- Place beef in a 3-qt slow cooker. Add carrots, celery, potatoes, onion, garlic, tomatoes, water, vinegar, and seasonings. Stir to combine.
- Cook beef stew on low-heat 5-6 hours. Season with salt and pepper before serving.

I think the weather in TN is confused also. It had been in the 30’s early last week but the past couple of days, it’s been in the high 60’s. I don’t know how to dress for this craziness.
I’m sure the temp is going to revisit the 30’s again, and I will be enjoying a large bowl of this stew when it does!

I have to admit, we got a bit of snow in November, and since then I’ve just been waiting for a big dump of it. We FINALLY got it on Friday, and I’m SO glad. Lol. Oh my gosh, I can’t even imagine temps in the teens right now! I think my body would literally just shut down if it was to get that cold around here right now.
