- Cauliflower - Olive oil - Unsalted butter - Garlic - All-purpose flour
- 2% milk - Heavy cream - Cheddar cheese - Monterey jack cheese - Panko
Toss cauliflower with olive oil, salt, and pepper on a large sheet pan and arrange in a single layer. Roast cauliflower at 400F 15-20 minutes until nearly tender.
Melt butter in a medium pan over medium heat. Add garlic and flour and cook 1-2 minutes. Whisk in milk and heavy cream and simmer until thickened.
Remove sauce from heat and stir in cheeses until melted. Fold roasted cauliflower into sauce and season with salt and pepper to taste.
Top mac and cheese with panko and bake at 400F 20-25 minutes until bubbly and lightly browned. Serve warm and enjoy!
