Chicken Marsala Orzo
Dredge chicken cutlets in flour, shaking off excess.
Pan sear chicken in olive oil and butter until golden brown.
Saute shallot and mushrooms in same pan until tender.
Add garlic and dry orzo and cook several minutes until orzo is toasted.
Add chicken broth and marsala wine and simmer orzo 10-12 minutes until orzo is tender.
Fold whipping cream into orzo.
Nestle chicken cutlets back into pan and simmer an additional 5 minutes.
Top skillet with fresh parsley and serve warm.
