Combine fresh salmon, lemon juice/zest, egg, breadcrumbs, onion, garlic, and seasonings in food processor.
Pulse mixture several times until finely chopped. (do not overprocess)
Stir fresh parsley into salmon and form mixture into 6 patties.
Working in batches, spray grate of air fryer with pan spray and lay patties in a single layer. Spray patties well.
Air fry patties at 400F 8 minutes, flipping patties halfway through cooking. Repeat with remaining patties.
Make the slaw by combining shredded cabbage and green onion in a large bowl.
Make the tahini dressing by whisking tahini (sesame paste), ginger, honey, water, and lemon juice.
Toss dressing with cabbage mixture until evenly combined. Season slaw with salt and pepper to taste.
Serve salmon patties and slaw between sandwich buns and enjoy this delicious way to upgrade salmon night!
