PEANUT SATAY CHICKEN STIR FRY
1. Saute chicken and onion in olive oil until chicken is no longer pink.
2. Transfer chicken to bowl and saute peas, sweet pepper, and broccoli in olive oil until tender.
3. Make the satay sauce by combining peanut butter, soy sauce, vinegar, sugar, and cornstarch.
4. Add sauce and chicken mixture to vegetables and cook until sauce is thickened.
Enjoy this 30-minute stir fry piled over hot fluffy rice!
