Instant Pot Barbacoa Beef

This barbacoa beef is...

Ingredients

- Beef chuck roast - Lime juice - Beef broth - Chipotle - Garlic - Cumin - Olive oil

- Cloves - Oregano - Bay leaf

Brown the beef

Sear beef cubes in instant pot using BROWN/SAUTE function until beef is golden-brown.

Cook on high pressure

Add beef broth, garlic, chipotle, lime juice, oregano, cloves, cumin, and bay leaf to instant pot. Cook on high pressure 35 minutes.

Release pressure

Allow instant pot to release pressure naturally 20 minutes. Unlock lid, discard bay leaf, and transfer beef to a large bowl.

Shred beef

Use two forks to shred beef. Toss 1/2-1 cup of cooking juices back into beef until beef is moistened.

Serve beef

Assemble beef on warmed corn tortillas, on a plate of nachos, in a burrito, or on your favorite salad!
