In a large bowl, combine oats, almonds, pecans, flaxseeds, cinnamon, and salt.
Add maple syrup, coconut oil, and vanilla extract to bowl and fold until just combined.
Arrange granola in an even layer on a parchment paper-lined sheet pan. Bake at 300F 45-50 minutes, stirring halfway through baking, until granola is golden brown.
Allow granola to cool, then break into clusters and stir in dried cranberries and pepitas. Enjoy!
