Marinated Miso Tofu and Bok Choy

This tofu is...

- Marinated for hours in a flavorful miso sauce - Roasted alongside tender bok choy and served in rice bowls - Bakes entirely on one sheet pan and has many make-ahead options

Ingredients

- Tofu - Soy sauce - Miso - Brown sugar - Rice vinegar - Red pepper flakes

- Garlic - Ginger - Bok choy - Sesame oil - Cooked rice - Scallions

Marinate the tofu

Place tofu in a medium container. In a small bowl, whisk soy sauce, miso, brown sugar, vinegar, red pepper, garlic, and ginger. Pour over tofu and allow to marinate at least 2 hours.

Prep the bok choy

Wash bok choy well and cut into 1 x 6" pieces. Arrange bok choy on a large greased sheet pan and toss with sesame oil, salt, and pepper. Roast bok choy at 375F 15 minutes.

Add the tofu

Remove bok choy from oven and arrange tofu on other half of sheet pan. Pour marinade evenly over tofu and bok choy.

Roast the tofu

Roast tofu and bok choy at 375F an additional 15-20 minutes until bok choy is tender and tofu is golden brown.

Assemble bowls

Divide rice between 4 serving bowls and arrange tofu and bok choy on top of rice. Top bowls with sesame seeds and scallions and serve immediately. Enjoy!
