- Mushrooms - Scallions - Ginger - Garlic - Vegetable oil
- Vegetable broth - Soba noodles - Miso paste - Nori
In a Dutch oven or medium pot, sauté the mushrooms in vegetable oil until just slightly tender.
Add ginger, garlic, and miso paste to mushrooms. Cook an additional few minutes until fragrant.
Add the broth to mushrooms and bring to a low simmer over medium-high heat.
Cook soba noodles according to package instructions. Rinse well to prevent sticking.
Add cooked soba noodles and green onions to soup and cook a few minutes until heated through. Season with salt and pepper to taste.
Ladle soup into serving bowls and top with additional green onions and nori if desired.
