Peach Tomato Gazpacho

- Croutons - Salt and pepper - Honey - White balsamic vinegar

Prep the ingredients


Combine peaches, tomatoes, cucumber, garlic, balsamic, olive oil, honey, salt, and pepper in a blender.

Blend gazpacho


Blend gazpacho on high speed until smooth, about 2 minutes of blending. Season with salt and pepper to taste if needed and chill in fridge 2 hours.

Serve gazpacho


Ladle chilled gazpacho into serving bowls and top with croutons, fresh basil, and a few drizzles of olive oil over top.
