Combine roasted red peppers, basil, nuts, garlic, and Parmesan cheese in a food processor.
With machine running, pour olive oil through top until pesto is smooth, scraping down sides as necessary. Season pesto with salt and pepper to taste.
Cook pasta according to package instructions and reserve 1/2 cup pasta water. Toss warm pasta with pesto and a few splashes of pasta water.
Serve pesto pasta with additional grated Parmesan cheese and fresh basil on top. Enjoy!
