In a large bowl, whisk eggs, coconut oil, honey, brown sugar, applesauce, milk, and vanilla until smooth.
Mix in oats, baking powder, salt, and strawberries until batter is just combined.
In a small bowl, combine flour, brown sugar, salt, and melted butter until crumbly.
Pour oatmeal mixture into a square baking pan and top with additional strawberries and streusel. Bake oatmeal at 350F 35-40 minutes until oatmeal is set.
Allow oatmeal to cool slightly then cut into squares and serve warm with Greek yogurt. Enjoy!
