In a large bowl, whisk sugar, melted chocolate, coconut oil, eggs, and vanilla extract.
In a medium bowl, combine flour, cocoa powder, baking soda, and salt.
Add flour mixture to liquid mixture with shredded zucchini and fold until batter is just combined.
Bake brownies at 350F 30-35 minutes until a toothpick comes out with moist crumbs sticking to it. Allow brownies to cool before slicing and serving. Enjoy!
