Ingredients

  • 1/2 cup pumpkin puree
  • 2 large eggs lightly beaten
  • 3/4 cup milk
  • 1/2 cup coconut sugar or brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 cups old-fashioned rolled oats
  • 3/4 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350F. Grease a 12-cup muffin tin and set aside.
  2. In a large bowl, whisk pumpkin, eggs, milk, sugar, vanilla, pumpkin pie spice, salt, baking powder, and baking soda until smooth. Gently fold in oats and chocolate chips until just combined.
  3. Fill prepared muffin cups 3/4 full with batter and garnish with a few additional chocolate chips if desired. Bake muffins at 350F 20-25 minutes or until oatmeal muffins are firm to the touch. Cool muffins completely before removing from pan. Enjoy!
