Charred Tomato + Mozzarella Spaghetti with Lemon Basil Vinaigrette

Ingredients

  • 1 tablespoon olive oil
  • 1-1/2 cups cherry tomatoes
  • 3 cloves garlic minced
  • 12 oz cooked spaghetti pasta
  • 8 oz fresh sliced mozzarella cheese
  • 2 tablespoons minced fresh basil
  • Salt and pepper to taste

Vinaigrette:

  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon agave syrup
  • 1/3 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a small saucepan over medium-high heat. Add cherry tomatoes to pan and toss occasionally until tomatoes are charred and bursting. Add garlic to pan and saute 1 minute longer. Remove from heat and set aside.
  2. In a large serving bowl, combine spaghetti, charred tomatoes, mozzarella, basil, and salt and pepper to taste.
  3. Make the vinaigrette: In a food processor pulse all vinaigrette ingredients until smooth. Season vinaigrette with salt and pepper to taste.
  4. Drizzle vinaigrette over spaghetti and toss to coat. Keep spaghetti chilled until ready to serve. Enjoy!
