Strawberry Banana Oatmeal Cookie Yogurt Parfaits
Piled with fresh strawberries and bananas, vanilla yogurt, and an oatmeal cookie crumble, these yogurt parfaits are the EASIEST summer breakfast to throw together!

Oatmeal Cookie Crumble:
- 3/4 cup old-fashioned rolled oats
- 1/3 cup white whole wheat flour
- 1 teaspoon ground cinnamon
- 1/4 cup coconut sugar or brown sugar
- 1/4 cup chopped pecans
- 1/4 cup coconut oil melted
- 2 cups vanilla yogurt
- 2 cups sliced fresh strawberries
- 2 medium bananas sliced
Make the crumble: In a medium bowl, combine oats, flour, cinnamon, sugar, pecans, and coconut oil until crumbly. Spread mixture on a parchment paper-lined baking sheet and bake at 400F 10-12 minutes until lightly golden brown. Break apart into clusters and cool completely.
Assemble the parfaits: In tall glasses, layer yogurt, cookie clusters, strawberries, and bananas. Repeat layers a total of 3 times. Serve immediately and enjoy!
