Ingredients

  • 4 cups chopped romaine lettuce
  • 1 cup fresh blueberries
  • 1 cup sliced fresh strawberries
  • 1 avocado pitted and diced
  • 1/2 cup chopped pecans toasted
  • 1/2 cup sliced green onion
  • 1/2 cup crumbled feta
  • DRESSING:
  • 1/3 cup orange juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white vinegar
  • 1 tablespoon agave syrup
  • 1 tablespoon poppyseeds
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  • In a large salad bowl, combine lettuce, blueberries, strawberries, avocado, pecans, onion, and feta. Set aside.
  • In a small bowl, whisk orange juice, mustard, vinegar, agave, and poppyseeds. Slowly drizzle in oil, whisking constantly until smooth. Season dressing with salt and pepper to taste.
  • When ready to serve, drizzle dressing over salad and toss to combine. Serve immediately.
