  • 1 small butternut squash peeled, seeded, and cut into 1/2 in cubes
  • 1 tablespoon olive oil
  • 4 cups torn romaine lettuce
  • 2 cups baby spinach leaves
  • 1/2 cup pine nuts toasted (optional)
  • MAPLE DIJON VINAIGRETTE:
  • 1/2 cup vegetable oil
  • 1/4 cup cider vinegar
  • 1/4 cup maple syrup
  • 1 tablespoon prepared dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
