Tomato Avocado Salad with Pine Nuts + Feta

This simple summer salad is loaded with lots of silky avocado, juicy tomatoes, crunchy nuts, and soft feta cheese.---The perfect way to use up all those garden tomatoes!

Ingredients

  • 5 medium heirloom tomatoes halved and thinly sliced
  • 2 medium ripe avocados sliced
  • 1/3 cup pine nuts toasted
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons minced fresh basil
  • LIME DRESSING:
  • 1 lime juiced
  • 2 tablespoons olive oil
  • 1 teaspoon white vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 garlic clove minced

Instructions

  • In a large serving bowl, combine tomatoes, avocados, nuts, feta, and basil.
  • In a small bowl, whisk dressing ingredients until smooth. Pour over salad and toss to coat.

Notes

Store salad in refrigerator up to 2 days.
