Cinnamon-Roll Oatmeal with Cookie Streusel

This cozy oatmeal has a luscious swirl of cinnamon glaze and is generously topped with crumbled oatmeal cookies. Your morning oatmeal will never be boring again!

Ingredients

  • 3-1/2 cups water
  • 2 cups quick-cooking oats
  • pinch of salt
  • 1/4 cup butter melted
  • 1/4 cup coconut sugar or brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup crumbled oatmeal cookies about 2 cookies
  • Milk for serving

Instructions

  1. In a medium saucepan over high heat, bring water and salt to a boil. Once water is boiling, quickly whisk in oats and reduce heat to low. Stir constantly for about 1 minute or until oatmeal is slightly thickened. Remove from heat and cover.
  2. In a small bowl, whisk melted butter, sugar, and cinnamon until smooth. Set aside.
  3. Ladle hot oatmeal into bowls. Drizzle with cinnamon-glaze and top with cookie crumbs. Serve oatmeal hot with milk.
