Make the french toast: Preheat a nonstick griddle to medium-high heat. In a shallow bowl, whisk eggs, milk, pumpkin, agave, spice, and vanilla until smooth. Dip both sides of bread, one at a time into egg mixture, then place on hot griddle. Cook french toast 3-4 minutes, flipping once to opposite side or until outside is golden. Transfer to serving plates and keep warm.
