Roasted Red Pepper Avocado Chicken Burgers

Unbelievably juicy and packed with summer flavors, these roasted red pepper avocado chicken burgers are a lighter and SUPER flavorful burger to throw on the grill all summer!

Servings 4 servings

Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1-1/2` teaspoons salt
  • 1/2 teaspoon pepper
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 4 slices provolone cheese
  • 1/2 cup baby spinach leaves
  • 4 hamburger buns, lightly toasted
  • 1/2 cup jarred roasted red peppers
  • 2 medium avocados, pitted, and sliced

Instructions

  1. In a medium bowl, combine ground chicken, breadcrumbs, egg, salt, pepper, soy sauce, and garlic until combined. Shape into 4 hamburger patties.

  2. Grill hamburgers over medium-high heat, flipping once until meat registers 160. Top burgers with cheese and broil under high heat 1 minute until cheese is melted.

  3. Place spinach leaves on toasted buns and top with burgers. Top with roasted red peppers and sliced avocado. Serve immediately and enjoy!
