Glazed Blueberry Muffin Baked Oatmeal

  • 3 large eggs lightly beaten
  • 1/4 cup greek yogurt
  • 1 cup milk
  • 1/2 cup coconut sugar or brown sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 cups old-fashioned rolled oats
  • 1 cup fresh or frozen blueberries if using frozen, do not thaw


  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons half and half cream


  • Preheat oven to 350F. Grease a 9x13 baking pan and set aside.
  • In a large bowl, whisk eggs, yogurt, milk, sugar, vanilla, cinnamon, salt, baking powder, and baking soda until smooth. Gently fold in oats and blueberries until just combined.
  • Scrape oatmeal mixture into prepared pan. Bake at 350F 20-25 minutes or until a light golden brown. Remove from oven and cool slightly.
  • Make the glaze: In a small bowl, whisk all glaze ingredients together until drizzling consistency. Drizzle glaze over cooled baked oatmeal and serve immediately. Enjoy!
