One-Bowl Pumpkin Chai Spice Pancakes

Ingredients

  • 1/4 cup melted butter
  • 1-1/2 cups buttermilk
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1-1/2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon coconut sugar or brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • Maple syrup and butter for serving

Instructions

  • In a medium bowl, whisk butter, buttermilk, pumpkin, and egg until smooth. Add flour, baking powder, salt, sugar, and spices to bowl and whisk until batter is smooth and just combined.
  • Heat a nonstick skillet to medium-high heat. Cook batter in batches by 1/4 cupfuls 1-2 minutes each side or until golden. Serve pancakes warm with maple syrup and enjoy!
