Swiss Cheese Asparagus Bacon Frittata
The EASIEST way to make eggs a little fancier! This swiss cheese asparagus bacon frittata is packed with tons of spring veggies, crispy bacon, and gooey swiss cheese.
Servings 6 servings
- 4 strips bacon diced
- 1-1/2 cups fresh asparagus spears cut into 1-in pieces
- 1/2 cup diced sweet red pepper
- 3 cloves garlic minced
- 6 large eggs lightly beaten
- 1/4 cup milk
- Salt and pepper to taste
- 1 cup shredded swiss cheese
- 1 tablespoon minced fresh parsley
In a 12-in skillet, cook bacon over medium-high heat until crispy. Add asparagus, pepper, and garlic and saute 8-10 minutes until veggies are just barely tender.
Stir in eggs, milk, and season with salt and pepper to taste. Reduce heat to medium and let eggs cook without stirring 5-8 minutes until eggs are set. Remove from heat and sprinkle with cheese. Broil under high heat 1-2 minutes until cheese is melted. Remove from oven and sprinkle parsley over top. Cut frittata into wedges and serve immediately. Enjoy!
