Smothered in a sweet 'n' spicy chipotle maple bbq sauce and unbelievably tender, these crockpot bbq chicken sandwiches are the ultimately easy comfort food!

Ingredients

  • <span class="mceItemHidden" data-mce-bogus="1"><span></span>1-1/2 lbs boneless skinless chicken breasts</span>
  • 1-1/2 cups tomato sauce
  • 1/4 cup ketchup
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar or brown sugar
  • 1/4 cup balsamic vinegar
  • <span></span>2 tablespoons minced chipotle in adobo sauce
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Buns for serving

Instructions

  • <span class="mceItemHidden" data-mce-bogus="1"><span></span>Place chicken in the bottom of a 3-qt slow cooker. In a medium bowl, whisk sauce, ketchup, maple syrup, sugar, vinegar, chipotle, paprika, and garlic powder until smooth. Pour over chicken.</span>
  • <span></span>Cook chicken on low 5-6 hours or until chicken is very tender. Remove chicken from crockpot to a cutting board and use two forks to shred chicken. Return to crockpot and let cook on low 1 additional hour. Season chicken with salt and pepper to taste and serve warm with buns. Enjoy!
