Ingredients

Meatballs

  • 2 lbs ground turkey
  • 1 cup breadcrumbs
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 tablespoons minced fresh parsley
  • 1 large eggs lightly beaten

Sauce

  • 1/2 cup soy sauce
  • 2 tablespoons white vinegar
  • 1/4 cup water
  • 1/2 cup coconut sugar (or brown sugar)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon cornstarch, mixed with 1 tablespoon water
  • 3 tablespoons sesame seeds
  • 2 tablespoons minced fresh parsley
  • Pasta or rice for serving

Instructions

Meatballs

  • In a medium bowl, combine ground turkey, breadcrumbs, salt, pepper, parsley, and egg until completely combined. Scoop meatballs into 1-in balls and place on a greased baking sheet.
  • Bake meatballs at 375F 15-20 minutes or until meatballs register 160F. Keep warm and set aside.

Sauce

  • In a small skillet over medium-high heat, bring soy sauce, vinegar, water, sugar, ginger, and garlic to a simmer over medium-high heat. Gradually whisk in cornstarch/water mixture until smooth. Stir occasionally until sauce is thickened then remove from heat and stir in sesame seeds.
  • In a serving bowl, pour sauce evenly over meatballs and gently toss to coat. Sprinkle with fresh parsley. Serve meatballs warm over pasta or rice and enjoy!
