Mexican-Style Quinoa Salad with Avocado Lime Dressing
Packed with tons of Mexican-style goodness and drizzled with a creamy avocado lime dressing, this colorful quinoa salad is so easy and so dang good, it will quickly become a dinner regular!
Salad
- 2 cups cooked quinoa, cold
- 3 cups chopped romaine lettuce
- 1/2 cup black beans, drained
- 1 medium tomato, diced
- 1/4 cup sliced black olives
- 1/2 cup shredded cheddar cheese
- 2 tablespoons minced fresh cilantro
- Salt and pepper to taste
Avocado Lime Dressing
- 1 medium avocado, peeled, pitted, and diced
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Avocado Lime Dressing
In a food processor or blender, pulse all dressing ingredients several times until completely smooth. Season with salt and pepper to taste. When ready to serve, drizzle dressing over salad and toss to coat. Serve immediately and enjoy!
