Banana Bread Chocolate Chip Energy Bites

  • 15 pitted Medjool dates
  • 1 medium ripe banana
  • 1/2 cup coconut flour
  • 1/2 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped pecans
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup semisweet mini chocolate chips


  • Place all ingredients except chocolate chips in a food processor. Process until mixture forms a ball of dough. Remove from food processor to a medium bowl and stir chocolate chips.
  • Roll dough into 1-in balls and place on a parchment paper-lined baking sheet. Chill energy bites 30 minutes or until slightly firm. Store energy bites in refrigerator until ready to serve. Enjoy!
