Banana Bread Chocolate Chip Energy Bites
Servings 15 energy bites
- 15 pitted Medjool dates
- 1 medium ripe banana
- 1/2 cup coconut flour
- 1/2 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup chopped pecans
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup semisweet mini chocolate chips
Place all ingredients except chocolate chips in a food processor. Process until mixture forms a ball of dough. Remove from food processor to a medium bowl and stir chocolate chips.
Roll dough into 1-in balls and place on a parchment paper-lined baking sheet. Chill energy bites 30 minutes or until slightly firm. Store energy bites in refrigerator until ready to serve. Enjoy!
