Whole-Grain Peanut Butter Chocolate Granola Bars

Start your day off on the right foot with these soft-and-chewy granola bars jam-packed with lots of whole grains from oatmeal, wheat bran, and shredded coconut, as well as creamy peanut butter and gooey chocolate chips for a fun kick! NO oil or butter in these granola bars!

Ingredients

  • 5 cups old-fashioned rolled oats
  • 1 cup wheat bran
  • 2/3 chopped pecans
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup coconut sugar
  • 1/4 teaspoon salt
  • 1-1/3 cups creamy peanut butter or almond butter
  • 1/3 cup maple syrup
  • 3 large eggs
  • 1/2 cup cold water
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips

Instructions

  • Preheat oven to 350F. Lightly grease a 9x13 baking pan. Set aside.
  • In a large bowl, combine oats, wheat bran, pecans, coconut, coconut sugar, and salt. In a medium bowl, whisk peanut butter, eggs,water, and vanilla until smooth. Combine liquid with the dry ingredients until just moistened. Stir in chocolate chips.
  • Press mixture evenly into prepared pan. Bake at 350F 20 minutes, or until edges start to brown slightly. Cool granola bars on a wire cooling rack completely before cutting into bars.

Notes

Store granola bars in an airtight container at room temperature up to 5 days.
NOTE: For peanut-free granola bars, feel free to substitute almond butter for the peanut butter.
