Fluffiest-Ever Buttermilk Pancakes
These simple buttermilk pancakes have an unbelievably fluffy texture and are perfect for Sunday brunch! PLUS make your own homemade pancake mix for the pantry!
white whole wheat flour
or brown sugar
batch Pancake Mix
Blueberries or add-in of your choice
Maple syrup for serving
Prepare the pancake mix: In a large bowl, whisk flour, baking powder, baking soda, salt, and sugar. Store at room temperature in an airtight container.
Prepare the pancakes: Place Pancake Mix in a large bowl and whisk in egg, oil and buttermilk until smooth. Fold in blueberries or add-in of your choice.
Drop pancake batter by 1/4 cupfuls onto a greased hot skillet. Cook pancakes 1-2 minutes on each side or until golden. Serve pancakes warm with maple syrup.
Store pancake mix in an airtight container at room temperature up to 1 month.
