Fluffiest-Ever Buttermilk Pancakes

These simple buttermilk pancakes have an unbelievably fluffy texture and are perfect for Sunday brunch! PLUS make your own homemade pancake mix for the pantry!

  • 2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons coconut sugar or brown sugar
  • 1 batch Pancake Mix
  • 1 large egg
  • 3 tablespoons vegetable oil
  • 2 cups buttermilk
  • Blueberries or add-in of your choice
  • Maple syrup for serving


  • Prepare the pancake mix: In a large bowl, whisk flour, baking powder, baking soda, salt, and sugar. Store at room temperature in an airtight container.
  • Prepare the pancakes: Place Pancake Mix in a large bowl and whisk in egg, oil and buttermilk until smooth. Fold in blueberries or add-in of your choice.
  • Drop pancake batter by 1/4 cupfuls onto a greased hot skillet. Cook pancakes 1-2 minutes on each side or until golden. Serve pancakes warm with maple syrup.


Store pancake mix in an airtight container at room temperature up to 1 month.
