Pesto-Tomato Grilled Cheese Sandwiches

Garden-fresh grilled cheese with plenty of garlicky pesto, juicy tomatoes, and gooey mozzarella cheese. This comforting grilled cheese is the ultimate summer lunch!

  • 6 slices whole wheat bread
  • 3 tablespoons prepared pesto
  • 6 to mato slices
  • 3 slices thickly-cut mozzarella cheese
  • 3 teaspoons butter softened


  • Evenly spread pesto over 3 slices of bread. Layer tomato slices and cheese over pesto and top with remaining bread slices to form 3 sandwiches.Butter both sides of bread with 1/2 teaspoon butter
  • Cook grilled cheese in a non-stick skillet, flipping once until bread is golden-brown and cheese is melted and gooey. Serve grilled cheese immediately.


Grilled cheese is best if eaten immediately after it is made.
