Prepare the pops: Place all pop ingredients in a food processor and pulse several times until mixture is smooth. (scrape down sides if necessary) Fill 8 popsicle molds 3/4 full of strawberry mixture and insert popsicle stick (or mold top) in the middle. Freeze popsicles until completely firm, about 2 hours. Remove popsicles from mold and store in freezer.

Prepare the chocolate drizzle: Place chocolate chips and oil in a double-boiler and melt over medium heat, stirring constantly until smooth.

Remove from heat and quickly drizzle chocolate over strawberry popsicles. (work fast, because the chocolate will harden quickly. Place popsicles back in freezer to set for about 10 more minutes before serving.
