BLT Egg Salad Sandwiches

Tired of boring-old egg salad sammies at lunchtime? Perk up this classic with the fun addition of bacon, lettuce, and tomato!

  • 4 hard-boiled eggs finely chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 8 slices whole-wheat bread or bread of your choice
  • 4 lettuce leaves
  • 2 to matoes thinly sliced
  • 8 strips bacon cooked


  • Prepare the egg salad: Stir together all ingredients in a small bowl until creamy. Store in refrigerator until ready to use.
  • Assemble the sandwiches: Place lettuce leaves on 4 slices of bread. Top with equal amounts of egg salad, sliced tomato, and cooked bacon. Replace tops with remaining slices of bread and serve.


Sandwiches are best if eaten on the day they are made.
