Caramelized Apple Granola Breakfast Parfaits
Add a little fun to your usual breakfast, with these fall-flavored granola parfaits! They whip up in less than 10 minutes and are layered with crunchy granola, caramelized apples, and smooth vanilla yogurt.
Servings 4 servings
- CARAMELIZED APPLES:
- 3 large apples peeled, cored and thinly sliced
- 1 tablespoon butter
- 1 tablespoon maple syrup
- 1 teaspoon ground cinnamon
- 2 cups vanilla yogurt
- 2 cups maple quinoa granola or granola of your choice
In a medium saucepan over medium-high heat, saute apples in butter, syrup, and cinnamon. Stir occasionally until apples are caramelized and tender, about 5-7 minutes. Remove from heat and cool slightly.
Assemble the parfaits: Between 4 parfait glasses, layer half of yogurt, half of caramelized apples and half of granola. Repeat layers, ending with granola on top. Serve parfaits immediately.
