Scrambled Egg Grilled Cheese
This breakfast-style grilled cheese is loaded to the max with scrambled eggs and lots of gooey mozzarella.---The ultimate grab 'n' go breakfast! @WholeHeavenly
Servings 3 servings
- 6 large eggs lightly beaten
- 2 tablespoons minced fresh parsley
- 2 cloves garlic minced
- Salt and pepper to taste
- 6 slices bread
- 3 slices mozzarella cheese
- 2 tablespoons softened butter
Heat a nonstick skillet over-medium high heat. Pour eggs into skillet and add parsley and garlic. Stir over medium-high heat until eggs are cooked. Season with salt and pepper to taste.
Divide scrambled eggs between 3 slices of bread and top eggs with a slice of cheese. Top with remaining bread to form 3 sandwiches.
Spread butter on both sides of bread and cook grilled cheese in batches in a saucepan over medium-high heat 2 to 2-1/2 minutes on each side or until golden and cheese is melted. Cut sandwich in half and repeat with remaining sandwiches.
Serve grilled cheese immediately warm.
