Scrambled Egg Grilled Cheese

  • 6 large eggs lightly beaten
  • 2 tablespoons minced fresh parsley
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 6 slices bread
  • 3 slices mozzarella cheese
  • 2 tablespoons softened butter


  • Heat a nonstick skillet over-medium high heat. Pour eggs into skillet and add parsley and garlic. Stir over medium-high heat until eggs are cooked. Season with salt and pepper to taste.
  • Divide scrambled eggs between 3 slices of bread and top eggs with a slice of cheese. Top with remaining bread to form 3 sandwiches.
  • Spread butter on both sides of bread and cook grilled cheese in batches in a saucepan over medium-high heat 2 to 2-1/2 minutes on each side or until golden and cheese is melted. Cut sandwich in half and repeat with remaining sandwiches.
  • Serve grilled cheese immediately warm.
