No-Bake Almond Butter Cookie Dough Bites

You won't be able to resist having 2 or 3 of these addicting chocolate-loaded cookie dough bites especially when it's hot outside! They whip up in minutes, so stock your freezer.

Ingredients

  • 1/2 cup creamy almond butter
  • 2 oz cream cheese softened
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil melted
  • 3/4 cup mini semisweet chocolate chips

Instructions

  • Place almond butter, cream cheese, and maple syrup in a medium bowl. Using a handheld electric mixer, beat on medium speed until creamy. Mix in vanilla, coconut oil, and chocolate chips until a very soft dough forms. Place dough in freezer to chill 5-10 minutes until it just starts to solidify.
  • Once dough is thickened, roll dough into 1-in balls and place on a parchment paper-lined sheet. Chill truffles in freezer 5-10 minutes or until truffles are firm. Enjoy!!

Notes

Store truffles in refrigerator up to 1 week. Truffles may also be frozen up to 2 months.
