One Big Blueberry Buttermilk Pancake

This XXL blueberry pancake is unbelievably moist, fluffy and exploding with juicy blueberries in every bite.---Just big enough for one hungry pancake-lover!

  • 1-1/2 cups white whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon coconut sugar or brown sugar
  • 1 large egg
  • 1 tablespoon vegetable oil
  • 1 cup buttermilk
  • 1/2 cup fresh blueberries
  • Maple syrup butter, and extra blueberries for serving


  • In a medium bowl, combine flour, baking powder, baking soda, salt, and sugar. In a separate bowl, whisk egg, oil, and buttermilk. Gently fold flour mixture into liquid until just combined. Fold in blueberries.
  • Heat a large greased skillet over medium-high heat. Once skillet is hot, pour batter into pan into one big circle. Cook pancake on first side until bubbles appear on surface and begin to pop (about 2 minutes) With a large spatula (or two spatulas) very carefully lift pancake and flip onto opposite side. Cook pancake on opposite side 1-1/2 to 2 minutes or until golden-brown.
  • Carefully transfer pancake to a large serving plate and enjoy warm with maple syrup, butter, and additional blueberries!


Pancake is best if eaten immediately warm.
