Lemon Ginger Soy Marinated Grilled Chicken

  • 1/4 cup lemon juice
  • 2 tablespoons minced fresh ginger
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons minced fresh parsley
  • Salt and pepper to taste
  • 1 lb boneless skinless chicken breasts


  • In a large bowl, whisk lemon juice, ginger, soy sauce, olive oil, garlic, parsley, salt and pepper until smooth. Add chicken to bowl and submerge it in the marinade. Cover bowl and marinate chicken in fridge at least 2 hours or overnight.
  • Remove chicken from marinade and pat dry. Grill chicken over medium-high heat, turning once until chicken registers 160F. Serve chicken hot and enjoy!
