Peach Compote

  • 3 medium peaches, peeled, pitted and diced into 1-in cubes
  • 1/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1/4 cup water

Cream Cheese Stuffed French Toast

  • 8 oz light cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1-1/2 teaspoons vanilla extract, divided
  • 8 slices thick-cut french bread
  • 4 large eggs, lightly beaten
  • 1/2 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter
  • Powdered sugar for serving


Peach Compote

  • In a small saucepan over medium heat, bring all peach compote ingredients to a simmer. Reduce heat to medium-low and let compote simmer for 15-20 minutes, stirring occasionally until compote is thickened. Remove from heat and keep warm.

Cream Cheese Stuffed French Toast

  • Carefully cut a small 1-1/2 to 2 inch slit in width of french bread slices. Set aside.
  • In a small bowl, beat softened cream cheese with sugar and 1/2 teaspoon vanilla extract. Spoon cream cheese filling into cut slit in french bread slices. Set aside for a moment.
  • In a large bowl, whisk eggs, milk, remaining vanilla, and cinnamon until smooth.
  • Heat a griddle or skillet over medium-high heat and grease with butter. Dip bread slices in egg mixture, coating both sides. Working in batches, cook french toast 1-1/2 to 2 minutes on each side, flipping once. Repeat with remaining french toast.
  • Serve french toast hot with peach compote and powdered sugar on top. Enjoy!
